Pour over coffee at home. This method was honed on the Clover food trucks with collaboration with our favorite roasters, including George Howell.

Equipment

Ingredients

  • 21 grams Ground coffee ("pour-over" grind size, like slightly coarse sand, best if you can grind fresh, play with quantity, can use up to 23 grams)
  • 300 grams Boiling water (Make sure water is filtered water that tastes great!)

Instructions

  • 21-23g of ground coffee (depends on which coffee we are using, try yourself to decide what you like)
    Use a Melitta-style cone with paper filter (I'm using a copper Kalita from Japan in video).
    Note: this method is NOT appropriate for a pour-restricted style filter like a V60. This method is for a flow-restricted filter like a Melitta or a Kalita
  • Step 1: Pour 2 Tablespoons of hot water over coffee grounds for "bloom", wait 20 seconds. Don't worry if grounds are not all the way covered with water. It's OK. Trust me.
  • Step 2: Pour water to the top of the cone. Wait for it to drip all the way through
  • Step 3: Pour water again to the top of the cone. Wait for it to drip all the way throughFinal poured coffee should be approximately 10.5 fluid ounces (a bit more than 300 grams)
