This is a depression era cake. My recipe is from my grandmother. She loved this recipe because it uses a single pan. No dishes!The cake is vegan (though the frosting used here is not). Enjoy!

Wacky Cake
1.5cupsflour
1cupsugar
5tbspcocoa powder
1tspbaking soda
1/2tspsalt
1cupwater
6tbspoil
1tbspvinegarany kind, Ayr uses cider vinegar
1tspvanilla extract
Broiled coconut frosting
1cupbrown sugar
4tbspheavy cream
1tbspbutter
1cupcoconutshredded coconut works best
Instructions
Wacky Cake (note - this recipe is designed to come together straight in the baking pan so that you only have to dirty 1 dish - Ayr uses a 9" round pan)
Preheat oven to 350°F
Sift flour, baking soda, cocoa powder together in pan.
Add sugar and salt. Mix all these dry ingredients together until even (it'll be one homogenous brown color from the cocoa)
Using the back of a spoon, make 3 big wells in the dry mixture (big enough to contain the wet ingredients without overflowing)
Pour oil and vinegar into 1 of the wells
Pour water into the 2 other wells, add vanilla into 1 of the water wells
Mix together (vinegar and baking soda will react together - fun for kids!)
Put into oven, bake for 25 min
Broiled Coconut Frosting
Mix ingredients together in a bowl
When cake is done, take cake out and set oven to broil - wait a few minutes for broiler to heat up
Spread frosting evenly over the cake
Put frosted cake into the oven - with oven door open, broil until frosting has lightly browned (a few minutes - you'll see the frosting start to bubble)
