Ingredients
1lbsbeanswe used Pinto
1Eachlarge onion
1cupneutral oilsafflower, grapeseed, canola, etc.
Salt to taste
Instructions
Cook beans to soft but not water-logged. See bean episode for more on this.
Puree beans. Heat oil in heavy pot or pan. When hot add onions.
When onions start to turn golden/ light brown add 1/3 of bean puree. Don't touch mixture for 1 minute. Then stir carefully. Allow to cook on high for another 2 minutes.
Then add another 1/3 of puree, mix to incorporate, and continue to cook mixture on high.
After 2 minutes add final 1/3 of puree and turn heat down to low and allow to simmer. At this point add water as necessary to ensure beans aren't too dry. Salt to taste (beans like a lot of salt). Serve.
