on old New England grits, ok to use grits instead

filtered water
+ up to 1 cup for cooking

salt

pepper

grated cheddar
Instructions
Combine grits and water in a pot. Bring to a hard boil for 10 minutes. Stir periodically to prevent sticking.
Bring temperature down and allow to simmer. When tender (45-60 minutes) season and mix in cheese.
