Refried beans can be transcendent. This recipe is simple but will transform how you think of this humble food.

Equipment

Ingredients

  • 1 lbs beans we used Pinto
  • 1 Each large onion
  • 1 cup neutral oil safflower, grapeseed, canola, etc.
  • Salt to taste

Instructions

  • Cook beans to soft but not water-logged. See bean episode for more on this.
  • Puree beans. Heat oil in heavy pot or pan. When hot add onions.
  • When onions start to turn golden/ light brown add 1/3 of bean puree. Don't touch mixture for 1 minute. Then stir carefully. Allow to cook on high for another 2 minutes.
  • Then add another 1/3 of puree, mix to incorporate, and continue to cook mixture on high.
  • After 2 minutes add final 1/3 of puree and turn heat down to low and allow to simmer. At this point add water as necessary to ensure beans aren't too dry. Salt to taste (beans like a lot of salt). Serve.
