Ingredients

  • 1/3 cup butter melted in pan you will use to cook cake
  • 2/3 cup brown sugar to sprinkle on melted butter
  • Pineapple circles 1 can
  • 3 eggs separated
  • 1 cup granulated sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup pineapple juice from the can
  • 1 teaspoon vanilla extract

Instructions

  • Set oven to 375°F
  • Use a rectangular, square (9×9) or round pan. Melt butter in pan in the oven. Sprinkle brown sugar on the melted butter.
  • In a mixer mix the egg yolks with sugar until light colored and fluffy. Transfer to another bowl and clean the mixer bowl.
  • Beat egg whites in mixer until still peaks.
  • Combine the dry ingredients (sifted), the egg yolk mixture, and the egg whites by gently folding.
  • Place the pineapples on the pan. Add cherries (or in our case cranberries) to the middle of the rings. Carefully cover with batter. Bake in oven 25-35 minutes.
  • After removing from oven allow to cool for 3-5 minutes. While still warm invert onto a serving tray. Delicious warm, or the next day.
